I wonder if you can help me. I am looking for a piece of software and would like to know if you could tell me what would be most suitable.

- I would like to build a stock inventory
- I would like to create and save invoices for customers (customers with accounts with me come into the shop and take stock, I want to make a record of it and then at the end of the month I send them an onvoice of what they owe me for those items)
- I DON'T need it for normal sales... for that I use a normal cash register.
- I would like to be able to use a barcode scanner to add stock to the database and to be able to add an item to an invoice.

What would be suitable?

You're exact requirement are met by the stock module from PosWyse, StockWyse. Fortunately, you can buy the module on it's own. Here is some more information about it - > http://www.iposltd.com/products/pos_software/poswyse_retail_system.html
